Galàni (Veneto, Italy)

Galàni is one of the most typical venetian carnival sweets.

  • 300g flour
  • 2 eggs
  • 2 oranges
  • 50g butter
  • icing sugar
  • olive oil
  • salt

Put the eggs, flour and the juice of the 2 oranges in a bowl, and mix thoroughly.
Stir in the butter melted in a bain-marie, and a pinch of salt, and blend.
Roll out the pastry quite thin, and cut out fairly large square or lozenge shapes (about 4x10cm).
Fry in boiling oil until golden, drain, and leave to dry in absorbent paper.
Dust with plenty of icing sugar before serving.
