Lime Mousse

  •  4 eggs (separated)
  • 4 limes
  • 150g cane sugar
  • 1 tbsp old rum


Mix egg yolks, lime juice and sugar together in a bain-marie or doule boiler, stirring until thick.
Remove from heat and cool.
Beat the egg whites until stiff peaks form, the carefully into the lime mixture.
Add the rum.
Chill 2 hours before serving.
