Appetizer from Greece
Serves: 6

  • 1 and half cups of yoghurt (strained)
  • 2 medium-sized cucumbers
  • 4-6 cloves of garlic, crushed
  • a little vinegar
  • salt


Skin the cucumbers and cut into thin strips with a vegetable grater; and then cut into small pieces.
Drain and squeeze well and add salt.
Add the crushed garlic, the vinegar and the yoghurt and mix.
If you wish, you can sprinkle the tzatziki with paprika and garnish with olives.


You can add more garlic for a stronger garlic taste or, instead, add a mixture of finely chopped almonds and other nuts.
