Creole Okra

Vegetables & Sides from Caribbean

Serves: 4 - 6


  • 1 tbs vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped peppers
  • 1 and half cups chopped ochroes (okra)
  • 14 oz can corn niblets, drained
  • 8 oz can whole tomatoes, crushed with their juice
  • 1tbs fresh thyme
  • 1 tsp paprika
  • 1 tsp cayenne pepper or 1 hot pepper, seeded and chopped


Heat the oil in a sauté pan and add the onion, celery and peppers.
Cook for about 4 minutes until fragrant and tender.
Add the ochroes, corn and tomatoes, and stir to combine.
Add the thyme, paprika and cayenne or hot pepper and season with salt and freshly ground black pepper.
Cook for about 30 minutes until the vegetables are tender.
